Beetroot Pizza

The Pinto Post | Recipes - Beetroot Pizza: I had a ton of leftover beetroot in my fridge after visiting the farm a couple of days ago, therefore I came up with a unique way to incorporate all the leftover veggies I had.

Do you struggle to get your kids to consume veggies, and all they want to eat are pizza, burgers, and chips? Well, I'm sure you are not alone. Here is a 'bake at home pizza' recipe loaded with a lot of veggies and goodness. Since children eat first with their eyes, it's always a good idea to make food colorful and vibrant. Please note, a single ingredient cannot make pizza healthy but its the portion size and frequency of consumption, Cheers to consuming our five a day! Let's get started...

All you need, 

  • 250gms Plain flour
  • 1 sachet instant yeast
  • 1/2 tsp salt
  • 1tsp oil
  • 1 whole beetroot peeled and pureed or grated
  • 2 tbsp pizza sauce or homemade tomato sauce
  • 3-4 cherry tomatoes
  • 2-3 slices ham/bacon/plant-based meat slices slices/cubed
  • 2 white mushrooms sliced 
  • 1 medium bell pepper sliced
  • 1/2 cup shredded mozzarella/ parmesan cheese
  • A few basil leaves for decoration (Optional)

In a bowl combine the flour, yeast, salt, and beetroot paste to form a soft wet dough, the beetroot paste will help form the dough but feel free to add water if necessary. Grease the bowl with oil and cover the dough using a cloth for 45-60mins or until it doubles in size. Once doubled punch the dough and knead for a minute, then split the dough into two big balls. On a floured surface roll out the dough using a rolling pin or press and stretch the dough until about 20-25cms. The thickness of the pizza depends on one's liking. Lift the base onto two floured baking sheets. Once ready spread the pizza sauce over the pizza, add the mushrooms, tomatoes, bell peppers, meat, and cheese. Put one pizza, still on its baking sheet, on top of the preheated sheet or tray. Pre-heat the oven to 200C fan and bake for 12-14 mins until crisp. Serve with a little more olive oil, and basil leaves if using any. Repeat the same process for the next dough ball.
