Rice Paper Prawn Rolls

I'm sure we have all had those hunger pangs during mid-day or tea-time. What we choose to eat at those times are important, choosing empty calories like aerated drinks, coffee, cakes, etc do no good. Always try reaching out for healthier options like seasonal fruits, dried nuts/fruits, overnight oats, veggie wraps, the options are endless! My all-time favourite evening snack are rice paper rolls, easy to make, super filling and can be made for dinner as well. Let's get started.

All you need is,

  • 100g prawns (deveined and deshelled)
  • 4 rice paper sheets (I use a Vietnamese brand)
  • 1 avocado (sliced)
  • 1 tomato (Sliced)
  • 1 carrot (Juliene/sliced)
  • Few leaves of Romaine Lettuce (Feel free to use any vegetables you have in your fridge)
  • 1 tsp oil (I used coconut)

In a pan, add oil and fry the prawns for 3-4 minutes on each side. You know it's done when the prawns change colour and form a C shape. It's time to assemble! Wet the rice paper roll in a bowl of water, place it on an even surface. On the lower end of the paper add the tomato, carrot and lettuce slices, just a few to prevent the roll from opening. Make a fold upwards, on the top part add the prawns, then layer the avocado slices on the prawns. 

Fold the left and right edges of the rice paper in, then starting from the bottom, roll up to cover the stuffing. Then keep rolling firmly. The rice paper is sticky, it will seal itself. At this point it is safe to eat the rice paper roll as it is, since the prawns are already cooked. But I like my paper rolls to be a bit crispy, hence I pan-fry it in the same pan I cooked my prawns, or you can air-fry it for 5-6 minutes. I have tried both methods and the end result is the same, TASTY RICE PAPER ROLLS! No need for fancy dips as avocado is a very creamy fruit, still tastes great.
