Coconut cake a.k.a GOAN BAATH

 

Super delicious coconut cake, very easy to make and loved by all. You can serve these cakes with tea or as dessert, you can also top it up with ice cream or fruit and call it a sundae. Let's get cracking..

All you need is,

  • 3 whole eggs
  • 125gms desiccated coconut
  • 30gms butter 
  • 1 tsp vanilla essence
  • 200gms sugar
  • 125gms Rava/ semolina 
  • 1 tsp baking powder
  • 1/2 cup water

Start by heating up the water and sugar in a saucepan, keep stirring well until the sugar dissolves. Add the coconut and rava/semolina and cook on low flame for 3-5 minutes. Once all combined well, add butter and mix thoroughly. Switch off the flame and let it cool to room temperature. 

In a bowl, beat the whole eggs, and add it to the cooled mixture. Finish by adding the vanilla essence and baking powder. Mix it well one last time and transfer to a cake tray. Bake this mixture in a preheated oven for 30 minutes at 200C. Check the cake using the toothpick method, if not clean bake for another 5-10 minutes. Once cooled, cut into pieces and serve.
