Bolinas / Goan Coconut Cookie
Bolinas or Coconut cookies are a famous snack in Goa (India). As a kid, I remember sneaking in the kitchen and snacking on bolinas, soft-coconutty cookies. Food in London is amazing, but nothing like goan food. Therefore, I challenged myself to attempt this amazing snack. Lets start.
All you need-
- 1 cup fresh grated coconut
- 1/2 cup rava / semolina
- 1/2 cup sugar
- 2 small egg yolks or 1 large egg yolk
- 30g maida / plain flour
- 1/4 tsp baking powder
- 1 tbsp butter
- pinch of salt
- 1/3 cup of water
On medium heat, place a saucepan, add sugar and water, cook for 2-3minutes. Once completely disssolved, add the rava / semolina, mix well and cook for 2-3mins. Add the fresh coconut and butter, mix until all the ingredients are incorporated properly. Switch off the flame and let the mixture cool.
Once cooled down, add the egg yolks, salt, baking powder and plain flour. Mix all the ingredients well. At this point the mixture should be dough consistency. Knead the dough lightly. Make 6-8 small portions of the dough and roll them in a ball shape. I made 6 big balls of the above ingredients, but feel free to make smaller or bigger cookies. Place the balls on a baking sheet, and use a fork to press the ball lightly (as shown below).
In a pre heated oven, bake the cookies for 20-25mins at 200C. The colour of the cookies should be golden brown as displayed. Let cool, and enjoy.
